The delicious and award-winning sourdough crackers by Peter’s Yard had humble beginnings – starting in a small bakery in the Swedish countryside. Peter’s Yard story began with Peter Ljungquist who wanted to breathe new life into the traditional knäckebröd. With a special sourdough starter, Peter started making delicious crispbread and selling it in his bakery.
Meanwhile, Ian Tencor and Wendy Wilson-Bett, two English friends, flew to Swedish on a research trip as the pair wanted to pursue their dreams of owning a Swedish bakery. During their trip, they visited Peter’s bakery. Peter’s sourdough crispbread had a depth of flavour that Ian and Wendy had never tasted before, and so a partnership was born.
Shipton Mill to the rescue
In the beginning, Peter’s Yard was still baking all of its crispbreads and crackers in Sweden. However, the popularity of their irresistibly crisp sourdough products quickly began to surpass the amount they could import. This is when John Lister, founder of Shipton Mill, came to the rescue. John provided Peter’s Yard with an artisan bakery in the UK plus, endless supplies of organic Shipton Mill flour to ensure Peter’s Yard continue to craft their delicious sourdough products.
Good things take time
Their hand-baked sourdough products begin with their 45-year-old sourdough starter, slowly fermented for 16 hours. Peter’s Yard products are made with natural, quality ingredients without shortcuts or artificial ingredients to achieve award-winning crunch and flavour. Peter’s Yard sourdough bites provide a moreish snack with bold flavours.
